Hi FabuFriends,
Over the Spring of 2011, while volunteering for Miriam’s Kitchen through a Compassion Over Killing (COK) service call to make and serve meals (on their “Meat-Free Friday”) to those in need, I met Jorge A. Mera. Jorge is the Producer and Director of the Vegan Lifestyle TV Show “Healthy Food Happy You.” When my friend, Chaitra, and I were outside in the parking lot about to leave, Jorge introduced himself (as he was about to leave too) and asked what we do. As soon as he heard, he asked us to come on his TV Show. Although Chaitra is a degree in Nutrition, she was too shy to go on (although she’s not that shy). I, of course, am not since being on camera is what I do for a living. So, posted on this page (along with link to site) is the Raw Veggie Pasta dish I made for the show along with the interview done on my story of healing, health and happiness.
Since then, Jorge and I decided to collaborate and Co-Produce several episodes and interviews for projects that I usually create/produce in New Orleans (or wherever I am). You will start to see more and more (because there’s lots of footage now) content posted as it becomes ready. The following are 2 of the recipes that I created for the Healthy Food Happy You TV Audience when I first appeared on the show (food demo segments have been split into 2 separate shows so I’m listing my 2nd reciped that hasn’t been posted yet too). I hope you enjoy! More to come!
Raw Food Recipes created on “Healthy Food Happy You” TV Show

Please note: Exact measurements are not listed because I usually add the amount of seasonings, condiments, oils, etc. according to the amount of veggies/ingredients I use (which depends if I’m eating for me … which is a lot … or doing for group … which is a lot more). Please feel free to find what works for you and your taste and the quantity being used. Also, feel free to substitute Veggies or spices/seasonings if there is something you like better.
Just be sure to keep it healthy!
Raw Veggie “Pasta”:
Veggies:
- Julienned Zucchini & Squash (used as “Pasta Noodles”)
- Julienned Beets (can also add or substitute Carrots)
- Swiss Chard (cut/chopped into strips)
- Broccoli Florets (chopped/broken into smaller pieces)
- Fresh and/or Sundried Tomatoes
Nut Cheese/Cream Sauce:
- Cashews
- Pine Nuts
- Sunflower Seeds
- Coconut Water
- Olive Oil
- Freshly Squeezed Lemon Juice
- Fresh Garlic
- White Pepper
- Himalayan Sea Salt
- Cayenne Pepper (Optional ~ To Taste)
(Blend until smooth in a high powered blender)
Basil Pesto:
- Olive Oil
- Fresh Organic Basil
- Pine Nuts
- Fresh Garlic
- Freshly Squeezed Lemon Juice
- White Pepper
- Himalayan Sea Salt
(Blend all ingredients in a blender)
Garnish Toppings:
- “Parma” Vegan Parmasean Sprinkles by “Eat In The Raw Naked Nutrition” (can be picked up at Pangea Vegan Store in Rockville, MD or ordered for delivery nationwide … or go to www.EatInTheRaw.com for other stores around country).
Combine Veggies in a bowl. Add Nut Cheese/Cream Sauce (add a little more Coconut Water if you want to thin into sauce) and Basil Pesto. Mix
all until coated evenly.
For presentation, plate mixture and add anything else you would like to the top (i.e., fresh/sundried tomatoes, beet strips and/or pine
nuts) think sprinkle “Parma” over dish.

Baby Bok Choy & Baby Portabella Mushrooms in Ginger Sesame Marinade:
Veggies:
- Baby Bok Choy (roughly chopped)
- Baby Portabella Mushrooms (roughly chopped)
- Broccoli Florets (optional for added color, flavor, texture and yummy goodness)
- Red Bell Pepper (diced)
Marinade/Sauce:
- Ginger Sesame Oil (or use Sesame Oil and add fresh/ground ginger in recipe)
- Chili Oil (or add Cayenne or Chili/Red Pepper Flakes to taste)
- Coconut Secret’s Raw Coconut Aminos (Soy-Free Seasoning Sauce)
- Fresh or Ground Ginger (to taste … I like plenty)
- Fresh Garlic (crushed)
- White Pepper
- Sesame Seeds (White and/or Black)
- Freshly Squeezed Lemon Juice (optional or use minimal amount so Ginger flavor prevails)
- Himalayan Sea Salt (optional … taste dish first to see if needed, especially with Coconut Aminos)
Garnish:
- Seaweed Strips (cut Nori sheets into thin strips to add to top of mixture when ready to serve)
- Diced Red Bell Pepper
- Sesame Seeds
Combine all ingredients and stir completely to make sure everything is coated. Continue to stir & spoon marinade mixture over dish several times before letting sit to marinate (either in fridge or out … your preference). Put in fridge if marinating overnight and go back occasionally to stir mixture, if desired.
For presentation when serving, add more diced Red Bell Pepper and optional Seaweed and sprinkle Sesame Seeds.
